Taco Bowl
Ingredients
- 2 Each Sweet Potato
- 2-3 TBSP Taco Seasoning
- 1 Cup Cottage Cheese
- 1 Each Avacado Mini or half of a large, ripe
- 1 TBSP Hot Honey
- 1 pound Lean Ground beef, chicken, or turkey
Instructions

- Cook Sweet potatoes (can peel and cube then roast in oven, or pierce and wrap in foil, then roast in oven. 350 degrees for approx 45 minutes or until fork tender. Set aside
- Brown meat- add taco seasoning. Add 2 tbsp water to combine
- Add beef, half of a sweet potato, ¼ cup of cottage cheese, and ¼ to ½ of an avocado
- Top with drizzle of hot honey
- Recipe makes 4 servings
